It’s almost time to elect our next President! This Tuesday, November 8, 2016 is Election Day here in the good ‘ole USA! I’m not going to turn this post into a political platform; I just hope that everyone gets out there and takes the time to VOTE! In honor of Election Day, I created these cupcakes with cute little flags to share with friends and family.

Once again I used my favorite white cake recipe from the Nerdy Nummies Cookbook and Yolanda Gampp’s famous Italian Buttercream. I’m telling you, if you’re not a fan of super sweet icing, you will LOVE this buttercream! It’s light, airy and not to sweet so you don’t end up with a toothache. I tinted half of the cake batter red and left the rest white. After doing some research to figure out the correct layering of the red, white and blue and let me say there’s a bit of controversy as to the correct order. I went with the blue on top using the italian buttercream flavored with rum extract. Actually, it was the most logical representation to have blue on top as blue is also at the top on a folded flag. That also seemed to be the most commonly accepted practice in my research.
I added some blue sprinkles on top of the icing to make them sparkle. Finally I printed some “I Voted” and “Election Day” flags on some sticker paper and attached them to little toothpicks. I just think it makes them look a little more fun and festive.
